Biscoff Protein Mug Cake: A Deliciously Easy Recipe for Any Time of Day! The last mug cake I posted was an absolute HIT – and for a good reason too! This Biscoff mug cake shares many of the same qualities that one prides itself in (it’s soft, fluffy, easy to make, high in protein, and DELICIOUS). Although it may not be self-saucing it is Biscoff flavored!! I mean… need I say more? It’s a dream for all of us Biscoff-loving, protein-chasing, sweet tooths. It’s also perfect for any given time really. Breakfast? Check! Mid-morning snack? Check! Late afternoon snack? Check! Post-dinner cravings? Check! You name the time of day and this protein mug cake is there for the taking. You can of course adjust the quantities if you want more calories in it, and you can also add toppings to achieve the same goal. But the basis is: it contains protein, it’s so easy to make that after one or two attempts you’ll be able to eye-ball the measurements and still have a flop-proof mug cake minutes away from being devoured, and finally it’s sweet enough to curb your cravings without giving you a pang of guilt for overindulging while the rest of the household is asleep. Mind you, I could also say without you waking up to wrappers that you don’t remember annihilating haha. Can I use any protein powder for this Biscoff mug cake? Yes, you can use any type of protein powder for this Biscoff mug cake recipe, as long as you enjoy the taste. But… big but: I wouldn’t recommend using any flavor of protein powder for this Biscoff mug cake. Although vanilla protein can work, it’s not the first choice I recommend you to use. The reason for this is that: as Biscoff’s number-one fan, I can tell you that I’ve tried it with just about everything. And while its flavor is untouchable on its own, that same potency of flavor just doesn’t pull through in the same way when you’re consuming it in any ‘diluted’ way. So, in order to achieve a mug cake that tastes the most “biscoff-y” (for lack of a better word), I recommend using a caramel (or biscuit) flavored protein powder – but not cookies and cream kind of biscuit. More along the lines of biscotti flavor if you can’t get your hands on caramel or salted caramel flavor. Trust me on this, because it makes a HUGE difference. What are some healthy toppings I can add to my Biscoff protein mug cake? If you want to add additional toppings (other than the Biscoff spread and crumbled lotus biscuit), I recommend sliced banana or Greek yogurt. The yogurt can add creaminess and extra protein to the mug cake! If you choose to add the yogurt you can also look at pairing it with a small drizzle of organic maple syrup. This will add a touch of sweetness without overloading on sugar. Mug cake Macros: Calories – 246 Protein – 12.4g Carbs – 36.1g Fats – 5.1g Ingredients: Self-Raising Flour & Baking Powder: Self-Raising Flour alone doesn’t give the mug cake enough rise, so it doesn’t end up as ‘cakey’ as we want it. It’s important to use both self-raising flour as well as baking powder to achieve the perfect cakey texture. Sweetener: You can substitute the sweetener with equal ratios of any other granulated sugar or liquid sweetener (maple or agave syrup). Adjust quantities to suit your preferences. Caramel Protein Powder: As I said earlier the flavor of the protein you use WILL impact the end result! Low-Fat Milk & Yogurt: The small bit of yogurt in the recipe is used in place of butter. While it’s not essential (you can substitute it with equal ratios of extra milk), I recommend it. These ingredients significantly impact the moisture, texture, and of course nutritional value of the mug cake. You can substitute them with full cream or plant-based alternatives. Vanilla Essence: If you have caramel essence on hand, then add that in place of the vanilla essence. This will give the mug cake even more caramel-flavoured goodness. Biscoff Spread & Lotus Biscuit (topping): If there’s anything you do – don’t skip these! These are what make this mug cake a Biscoff mug cake! Directions & Tips: Unlike the chocolate protein mug cake, you can use one bowl to make and microwave this recipe! (Minus a tiny bowl to melt the Biscoff spread in). Step 1: Place all of the dry ingredients into a bowl (or mug) and mix them together so that they are incorporated. Step 2: Add the milk, yogurt, and vanilla to the same bowl and stir until everything combines and no dry ingredients remain. Step 3: Place into the microwave for 60 seconds. Remove from the microwave and set aside. Step 4: Microwave the Biscoff spread for 10-15 seconds until smooth and runny. FAQ: Can I Add a Spoonful of Biscoff Spread Into The Middle Of My Mug Cake Before Microwaving? Yes, you can! I’ve tried it before with this recipe and the Biscoff spread melts while in the microwave and makes this mug cake even more delicious! Just keep in mind that due to the soft and fluffy nature of this mug cake, I found that the Biscoff spread sunk to the bottom of the mug cake. If you don’t mind that, then feel free to spruce it up! Should I Use Smooth or Crunch Biscoff Spread for This Recipe? You can use either. But the smooth spread will go further in terms of drizzling than the crunch one will. For this reason, I would rather opt for the smooth spread and add the biscuits to give the Biscoff mug cake that same crunch factor. Can I Prepare the Mug Cake Batter in Advance? This protein mug cake is best served fresh. It can tend to dry out quite a bit if left after cooking. If you’d like to prepare it in advance, I recommend mixing the dry ingredients in advance and storing them in an airtight container. When you’re ready to make the cake, you can add the wet ingredients in, stir, and microwave. How Can I Prevent My Biscoff Protein Mug Cake from Overflowing in the Microwave? To prevent your mug cake from overflowing in the microwave, make sure you use a mug or bowl that is large enough. The mug/ bowl should not be filled to the top with batter, as there will be no room for the cake to rise. Rather, aim for it to be filled halfway (or slightly above) halfway to provide it with enough room to expand without overflowing. Finally, if you’re still a bit worried that it may spill over, place a side plate or a sheet of paper towel underneath the mug when you place it into the microwave.
